At the CoffeeFest in Las Vegas, I attended a "Hands on Espresso Extraction" class. The instructer was a young man named Joseph AKA the "Maestro." He taught how to properly extract espresso without adding a bitter taste. If espresso is extracted properly, it will taste smooth and a little sweet.
